Greece Recipes: Spanahorizo



Ingredients:
  • 120ml/4fl.oz. Olive oil
  • 1 tbsp freshly chopped Parsley
  • 1 large Onion, finely chopped
  • 1 tbsp finely chopped Garlic
  • 720ml/24fl.oz. Water
  • 2 tbsp Tomato Paste
  • 200g/7oz Fresh Tomatoes, chopped
  • Salt and Pepper
  • 450g/1lb Fresh Spinach, stalks removed
  • 225g/8oz Long Grain Rice
Preparation:

1. Heat the oil in a large saucepan, add the parsley, onions, and garlic and sauté until the onions are soft and transparent.

2. Add the water and bring it to a boil then add the tomato paste, chopped tomatoes, salt, and pepper and mix well.

3. Add the spinach and rice, mix then simmer over a low heat for about 30 minutes or until the rice is tender. Serve immediately.
