Greece Recipes: Anginares a la Polita



Ingredients:
  • 150ml/5fl.oz. Olive Oil
  • 1 large Onion, thinly sliced
  • 4 Carrots, sliced
  • 2 tbsp freshly chopped Dill
  • 4 fresh Globe Artichoke Hearts, trimmed
  • The juice of 2 Lemons
  • 360ml/12fl.oz. Water
  • 250g/9oz Potatoes, peeled and sliced
  • Salt and Pepper
Preparation:

1. Heat the olive oil in a large saucepan, add the onions and sauté gently for 2-3 minutes stirring.

2. Add the carrots and the dill and cook for 2-3 minutes over a low heat, stirring constantly.

3. Add the water and the juice of 1 lemon and slowly bring to the boil then add the potatoes and artichokes adding a little more water if necessary so the artichokes are almost covered with liquid Season with salt and black pepper, cover and simmer for about 40 minutes or until the artichokes are tender. Serve hot.
