Greece Recipes: Mushrooms a la Grecque


Serve 4 Cold Hors d'oeuvre Starter Appetizer Healthy Eating Vegetarian Vegan Dairy Free Eggless Gluten Free Wheat Free Greece Europe Mediterranean
Ingredients:
- 350g/12oz Button Mushrooms
- 120ml/4 fl.oz. Olive Oil
- Juice of 1 Lemon
- A large bunch of Flat leaved Parsley
- 2 Garlic Cloves, crushed
- 150ml/5 fl.oz. Vegan White Wine
- 2 Sprigs Fresh Thyme
- Salt and Pepper
Preparation:
1. Wipe or wash the mushrooms and cut off a thin slice from the ends of the stems. Leave them whole if they are small, otherwise cut them in 2 or 4.
2. Put the remaining ingredients together in a large saucepan and bring to the boil.
3. Add the mushrooms and cook gently, stirring occasionally, for about 5 minutes and remove from heat. Serve the mushrooms cold in their sauce.
