Minted Cucumber with Feta


Serves 4 Cold Vegetarian Vegetables Herbs Hors d'oeuvre Starter Appetizer Gluten Wheat free Eggless Greek Mediterranean Europe
Ingredients:
- 1 large Cucumber
- 125g/5oz Feta Cheese, crumbled
- 1 tbsp freshly chopped Mint
- 6 tbsp Olive Oil
- 3 tbsp Lemon Juice
- Salt and White Pepper
Instructions:
1. Wash and dry the cucumber and cut it into very thin slices. Place the slices in a salad bowl, sprinkling with the feta cheese and mint.
2. In a small bowl, whisk together the oil, lemon juice, salt and pepper. Pour over the salad and toss to coat well. Serve immediately.
