Greece Recipes: Hummus


Ingredients:
- 200g/7oz pre soaked Chick Peas
- 4 tbsp Olive Oil
- 1 Clove Garlic, crushed
- 4 tbsp Lemon Juice
- 4 tbsp Tahini paste
- Salt and Pepper
- 1/4 teasp Sweet Paprika
Preparation:
1. Drain the chick peas and place in a saucepan. Cover with water, bring to the boil and simmer for 1 hour, adding more water as necessary. Drain, reserving the water.
2. Place the chickpeas in a food processor and blend until smooth, adding enough of the reserved water to give a consistency similar to very thick mayonnaise. Refrigerate for at least 1 hour.
