Greece Recipes: Beef Stifado


Serves 6 Hot Beef Main Course Greece Europe Mediterranean Dairy Free Eggless
Ingredients:
- 180ml/6fl.oz. Olive Oil
- 1.3kg/3lbs Stewing Steak, cut into chunks
- 1kg/2.2lb Button Onions
- 180ml/6fl.oz. Red Wine Vinegar
- 3 Tomatoes, diced
- 1 large sprig Rosemary
- 1 Bay Leaf
- 2 Garlic Cloves, thinly sliced
- Salt and Black Peppercorns
Preparation:
1. Heat the olive oil in a large saucepan until very hot, add the meat and brown on all sides.
2. Add the onions to the pan and sauté for about 5 minutes.
3. Add the remaining ingredients and enough water to just cover. Mix well, bring to the boil then reduce the heat slightly and simmer for 2 hours, until very tender. Serve hot.
