180ml/6fl.oz. Olive Oil
1.3kg/3lbs Stewing Steak, cut into chunks
1kg/2.2lb Button Onions
180ml/6fl.oz. Red Wine Vinegar
3 Tomatoes, diced
1 large sprig Rosemary
1 Bay Leaf
2 Garlic Cloves, thinly sliced
Salt and Black Peppercorns
1. Heat the olive oil in a large saucepan until very hot, add the meat and brown on all sides.
2. Add the onions to the pan and saut for about 5 minutes.
3. Add the remaining ingredients and enough water to just cover. Mix well, bring to the boil then reduce the heat slightly and simmer for 2 hours, until very tender. Serve hot.
